The grape harvest starts at the end of August to continue until September; the harvest begins with the white grape and then the red one. The grapes are harvested by hand and transported in small plastic crates in order to preserve the integrity of the fruit. The vinification of white grapes takes place by passing the whole grapes to very low working pressures in order to avoid the extraction of unwanted substances; the red one is immediately subjected to maceration and subsequent fermentation. Fermentation and refining take place in steel tanks at controlled temperature. Once the aging phase is over, the wine is ready to be bottled; in this way our Acquagiusta wines are born.
